El establecimiento de restauración “El Lagar”, ubicado en la calle Barahona de Soto organizaba el pasado domingo un ronqueo de atún en directo, en el que participaron medio centenar de personas.
Según Manuel Contreras, gerente del establecimiento, se trata de la primera vez que una actividad de estas características se desarrolla en la provincia de Córdoba. Además, los participantes en la actividad, pudieron conocer cómo se hace paso a paso este despiece de atún, en este caso procedente de la localidad gaditana de Barbate. También pudieron disfrutar de un total de seis platos, confeccionados con atún, como ingrediente principal, de la mano del chef Carlos Piñero.
En esta ocasión, los platos degustados eran un tradicional Tartar, Tataki, Ventresca ahumada, Brioche de lomo bajo con mayonesa Kimchii y Tiritas de Tarantelo a la Ginebra Zayt, acompañados del vino idóneo como verdejo, espumoso, fino o viejo.
La pieza, llegaba tras un proceso de congelación, cumpliendo los requisitos sanitarios estipulados. El gerente de El Lagar, anunciaba nuevas actividades con las que se pretende aportar un valor añadido a Lucena como punto de encuentro turismo gastronómico de calidad.
Además, anunciaba que el establecimiento será reconocido por disponer de la mayor variedad de carta de vinos de Córdoba capital y provincia.
